About This Coffee
At Las Palomas, coffee cultivation is a cherished family tradition passed down through generations. The six-hectare farm, now run by siblings Daniel José and María Isabel Monge García, takes its name from the diverse bird population that makes this region home. During harvest season, a dedicated team of 25 collectors carefully picks the coffee cherries at their peak ripeness.
Sustainability & Traceability
The coffee is processed at a nearby facility, where meticulous attention is paid to every step. After careful sorting, the cherries undergo a precise washed process before being dried on patios for six days. The final drying stage in mechanical dryers ensures consistent quality. When these exceptional beans reach our roastery, we carefully roast them to enhance their naturally complex flavour profile, showcasing bright lemon notes alongside delicate honeysuckle florals and a rich chocolate sweetness.
